Dan Green, English guy, trained as a Chef way back in 78……moved around the UK building knowledge and experience. Ended up back In London where it all started. Ran Fish Central restaurant for 10 years from 1993, also finding the time to work the day shift at St Luke’s Trust, as well as training to be a lecturer and member of the CIEH training in food hygiene. So kept busy!!
